Christmas would not be Christmas without _______________________________.

You can fill in the blank with whatever you’d like, but I bet it is something related to a food or treat that your mom or grandma made at your holiday celebrations when you were a kiddo.

My family has SO many special treats—cookies, bars, breads and lefse—that we only indulge in once a year and look forward to having at Christmas. What is at the top of my list? My mom’s Chocolate-Covered Cherry Bars.

These festive bars look so pretty, adding a pop of color, to any dessert tray. The combo of the chocolate layer with the creamy fondant and the chocolate glaze and cherry on top is just the best. All I want for Christmas are these bars and now you can make them too!

My mom shared the recipe (below) which appeared in a little recipe booklet she picked up at the grocery store but made a big impression and has been part of her holiday baking for the past 30 years (or more?).

It’s a pretty straight-forward, quick recipe and great to bring to a holiday party or share with others. But if you do plan to give them away, I suggest making a double batch so you can keep some for yourself (or share with me!).

Ingredients

Bottom Layer

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 tablespoons cocoa
  • 1 1/4 cup flour

Butter Cream Fondant

  • 2 tablespoons butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla

Glaze Topping and Cherries!

  • 1 square unsweetened baking chocolate, (or 3 tablespoons of cocoa combined with 1 tablespoon of shortening)
  • 1 tablespoon butter
  • 36 maraschino cherries, (dried well)

Method

  • 1)

    Preheat oven to 350 degrees.

  • 2)

    Soften the butter and combine with sugar and cocoa.

  • 3)

    Mix in flour until particles are fine.

  • 4)

    Press into bottom of 8 or 9 inch ungreased, square pan; bake for 15 minutes.

  • 5)

    While baking, prepare fondant by combining butter, powdered sugar, milk and vanilla.

  • 6)

    Spread fondant over baked bars,

    Add cherries to top of fondant, making six rows of six cherries.

  • 8)

    Prepare glaze, melting unsweetened chocolate and butter. Drizzle on top of cherries.
