Sue’s Dip

Sarah

Prep time: 5 minutes

Serves: 20 people

It just takes four ingredients and two mintues for pure dip perfection. Sue’s Dip is creamy, it’s cheesy and it has a slight kick from the picante—making it the perfect texture and flavor combination to coat your tortilla chips or other preferred dip-dunking vessel.

Sue’s Dip is one of those special, namesake recipes in my collection that will be forever tied to a particular person who has made it and shared it so many times that it has become their signature dish!
Sue’s Dip is one of those special, namesake recipes in my collection that will be forever tied to a particular person who has made it and shared it so many times that it has become their signature dish!

When I was looking for the perfect dip recipe to make for the big game this Sunday, I knew just the person to call.

Sue, who is mom to our good friend and neighbor Dan, is known for her dip that she has been bringing to parties and potlucks for at least the 20 years I have known her. As a matter of fact, most of the times I’ve seen her throughout the years, she’s usually had this glorious dip in tow.

“Sue’s Dip,” as we call it in our circle, is a tasty concoction of equal parts (8 ounces each) of cream cheese, sour cream, Pace Picante Sauce and shredded cheese. Seriously, it doesn’t get any easier than this dip recipe!

Where does the recipe come from?

Sue remembers getting the recipe from a co-worker many years ago when they used to have potlucks at the office.  She worked at a bank in St. Paul and fondly remembers get-togethers when staff would bring in a variety of crowd-pleasing dishes that everyone loves to eat. These were often cherished, family-favorite recipes and included everything from cocktail meatballs (yes, the kind with grape jelly) to sloppy joes, hotdishes and, of course, this dip.

Why is The Dip so special?

It’s creamy, it’s cheesy and it has a slight kick from the picante—making it the perfect texture and flavor combination to coat your tortilla chips or other preferred dip-dunking vessel.

From the moment Sue laid eyes (and lips) on this dip at that office potluck years ago, she knew she had to make it.

“It’s just a great recipe because it’s so easy,” says Sue. “It takes two minutes to make!”

And make it, she has, over and over again to the delight of her friends and family and my neighborhood where she always a welcome guest—and I swear it is not just because she often brings this dip, Sue is a truly delightful human being who I’ve always loved catching up with at our neighbor gatherings…usually as I hover over her beloved dip.

Tips from Sue

  • Sue says the Pace brand picante sauce works best for success with this dip. She adds that she uses the hot variety if she is serving the dip to mostly adults but has also used a combination of hot and medium.
  • Soften the cream cheese a bit for a smoother dip.
  • Sue says you could some garnishes to the dip like black olives.
  • The dip is best served with tortilla chips but any chip, cracker etc. would work too!
