Strawberry pop and cake? Ok, I’m in. When I came across this cake in a sweet, little recipe box I found at a vintage shop, I thought it sounded so easy (and FUN) and that’s all it took for me to give it a try.
This recent find from a local vintage shop has so many great recipes inside, from fun desserts like this cake (which was called Easter Pop Cake) and Soda Cracker Pie to more than 20 recipes for pickles!
This is my latest “recipe redux” where I try an old recipe for no particular reason (other than for fun) and report back on whether it’s worth your time and effort. I am here to tell you that “100 percent yes!” you should make Strawberry Pop Cake.
Why? Sometimes you don’t need a fancy cake with layers or a decorative icing or one that requires dragging out a cake pedestal. This is a simple cake for those times when you just need a down-and-dirty, people-pleasing dessert that tastes amazing and will put a smile on someone’s face because it’s just pretty to look at. Plus, I think it would be particularly fun to get the kids involved, because…pop?!
All it takes is baking up a cake from a mix in a 9 x 13 pan, poking some holes in it and pouring some pop over the top. It doesn’t get much easier than that! The frosting is also simple and proves you don’t need a lot of fuss or ingredients to make a fluffy topping of deliciousness.
The frosting for this cake is made my blending together pudding mix and milk (until the pudding dissolves) and folding in a container of Cool Whip. I added a few drops of food coloring to give it a pink tint.
