The One and Only Chocolate Cake is a rich chocolate cake that includes a cup of coffee to bring out the chocolate flavor. It’s topped with creamy, chocolate buttercream frosting.

I am keeping this short and sweet because, well…chocolate. And cake! No back-story necessary.

Cake plays such an important role in our lives. Part of important life celebrations and milestones, cake is so symbolic of happiness and festive get-togethers with family and friends. Simply put, cake brings joy. And chocolate cake means double the fun. So here is the only chocolate cake recipe you need. It comes from my mom’s recipe box, and it’s been the star of so many family birthdays throughout the years.

My mom actually found the cake recipe in a magazine years ago, paired with vanilla icing. Her own version includes a “perfect chocolate buttercream” frosting. I’m sure this cake would be very good with a plain buttercream or vanilla-flavored frosting like the original, but the chocolate buttercream makes it a true showstopper and a sure crowd-pleaser kind of cake.  I am telling you, you need this cake in your life. Your family will thank you for it!

Ingredients

Cake

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 3/4 cup cocoa
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 cup hot coffee
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla

Frosting

  • 1 1/2 cups soft butter
  • 1 cup cocoa
  • 5 cups powdered sugar (sifted)
  • 1/2 cups milk
  • 2 teaspoons vanilla

Method

Cake

  • 1)

    Preheat oven to 325 degrees F. Grease and flour two 9-inch cake pans.

  • 2)

    In a large mixing bowl, sift together dry ingredients.

  • 3)

    Add oil, coffee and milk; mix at medium speed for two minutes.

  • 4)

    Add eggs and vanilla; beat two more minutes (batter will be thin).

  • 5)

    Pour into cake pans and bake for 25-30 minutes.

  • 6)

    Cool cakes 15 minutes before removing from pans!

Frosting

  • 1)

    Cream butter and cocoa in mixing bowl, then add 1 cup of powdered sugar followed by 1 tablespoon of milk.

  • 2)

    Mix at high speed for about one minute; then, repeat (adding 1 cup of sugar with 1 tablespoon milk) until all sugar has been added. You may need more or less milk depending on desired consistency.

  • 3)

    Last, add vanilla
