Luxurious lemon pie filling is the base for a mix of fruit cocktail, pineapple chunks, bananas and mini marshmallows. It’s like sunshine in a bowl

My Aunt Ede’s Fruit Salad includes lemon pie filling with fruit cocktail, pineapple chunks, mini marshmallows mixed in and topped with sliced bananas.

I’ll admit that Minnesotans use the term “salad” a bit loosely to describe dishes that often resemble more of a dessert with ingredients like cut-up pieces of candy bars, Jell-O or mini marshmallows. This fruit salad from my Aunt Ede is one such recipe, but call it what you will, this dish will have you licking your plate—and honestly what leafy salad ever made you want to do that?

Luxurious lemon pie filling is the base for a mix of fruit cocktail, pineapple chunks, bananas and mini marshmallows. It’s like sunshine in a bowl and such a welcome treat during the cold, dark days of winter or anytime you need a side dish that is not only irresistible to eat but a true bright spot on the table.

From the colorful fruit (I like to add extra maraschino cherries) to the marshmallows that give it a touch of whimsy, this is such a happy, little salad that is sure to evoke a smile in anyone who takes a gander at it. It would be such a perfect dish to bring to a potluck (someday, right?!) or to package up in a Mason jar to share with a loved one.
