Carol’s Krispies are next-level Rice Krispie Bars that layer in flavors of peanut butter and butterscotch with the marshmallow base.
These are not your mother’s Rice Krispie Treats. Nope! They are MY mom’s, and that’s why we call them Carol’s Krispies in my family.
Years ago, my mom started blending in peanut butter and melted butterscotch chips to the recipe that’s found right on the box of Rice Krispies cereal. The result? Next-level Rice Krispie bars that are even more irresistible than the original.
We love them so much that these bars often accompany our family on road trips, camping adventures or any variety of get-togethers. A sweet and satisfying snack or a simple dessert to share with others, Carol’s Krispies are easy to make (I always stock these ingredients at my house) and travel well.
My mom also continues to make these bars several times throughout the year, particularly when she knows that her kids or grandkids are coming through town. It’s always a “treat” to visit my parents’ house and find a stash of Carol’s Krispies on the kitchen counter wrapped in my mom’s signature method of storing precious baked goods—carefully wrapped in double baggies (never Ziploc!) with tightly-wound twist ties.
