It comes from my mom’s recipe box, and it’s been the star of so many family birthdays throughout the years.
My mom actually found the cake recipe in a magazine years ago, paired with vanilla icing. Her own version includes a “perfect chocolate buttercream” frosting. I’m sure this cake would be very good with a plain buttercream or vanilla-flavored frosting like the original, but the chocolate buttercream makes it a true showstopper and a sure crowd-pleaser kind of cake. I am telling you, you need this cake in your life. Your family will thank you for it!

Ingredients
Cake
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup cocoa
2 cups sugar
1 cup vegetable oil
1 cup hot coffee
1 cup milk
2 eggs
1 teaspoon vanilla
Frosting
1 1/2 cups soft butter
1 cup cocoa
5 cups powdered sugar (sifted)
1/2 cups milk
2 teaspoons vanilla
Method
Cake
1)
Preheat oven to 325 degrees F. Grease and flour two 9-inch cake pans.

In a large mixing bowl, sift together dry ingredients.

Add oil, coffee and milk; mix at medium speed for two minutes.
4)
Add eggs and vanilla; beat two more minutes (batter will be thin).
5)
Pour into cake pans and bake for 25-30 minutes.
6)
Cool cakes 15 minutes before removing from pans!
Frosting
1)
Cream butter and cocoa in mixing bowl, then add 1 cup of powdered sugar followed by 1 tablespoon of milk.
2)
Mix at high speed for about one minute; then, repeat (adding 1 cup of sugar with 1 tablespoon milk) until all sugar has been added. You may need more or less milk depending on desired consistency.
