A salad version of a taco that includes seasoned ground beef, Iceberg lettuce, tomatoes, green onion, shredded cheese–all mixed together with Doritos.
The best recipes are those shared among friends and family, maybe after making a big impression at some kind of get-together or even just by word-of-mouth. And even though I constantly look to cookbooks and Instagram for inspiration, I always go back to the tried-and-true dishes that came to me as a recommendation from a loved one or trusted friend.
Case in point: this Doritos Taco Salad recipe has been making the rounds in my “circle” for decades—since the 80’s to be exact. That’s when my mom got the recipe from her friend Kay who happens to be the mom of my oldest childhood friend Shannon.
I recently checked in with Kay and loved learning that she actually got this recipe from a fellow BMX mom back in the day. I remember fun day trips with their family to watch Shannon and her brother compete in BMX races! They were so cool with their Van shoes and Van Halen cassette tapes. God, I miss the 80’s.
I am sure Kay and my mom swapped quite a few recipes through the best decade ever. Our families used to spend a lot of time together, the way you do when your kids are close friends and are inseparable. I love that this is a dish that we all still enjoy today.
It’s not only a super tasty salad (it has Doritos as an ingredient for goodness sakes!), but the recipe makes an enormous portion. Therefore, it’s a great option when there is a crowd with many mouths to be fed and one that travels well.
Just be sure to mix all ingredients, particularly the chips, right before serving. And, it can’t hurt to have some extra Doritos on hand to add in when you eat the leftover salad. You can never have too many Doritos!
