My mom has two riffs on the classic treats in her recipe box that are anything but ordinary. One is her own recipe that adds in peanut butter and butterscotch. You can get the recipe for Carol’s Krispies here.
The other recipe, which is more than 50 years old, comes from an old friend she knew when my parents were first married and living in southern Minnesota. They’d often get together with a few other young couples and share “potlucky things.” Her friend Mary made this recipe (below) which she simply called “Rice Krispie Bars.”
The bars, with the understated name, include peanut butter mixed into the cereal base and then topped with an indulgent layer of chocolate and more peanut butter. My mom doubles the amount of chocolate chips (using a whole package) and adds more peanut butter (shes uses 3/4 cup) for the frosting layer, which in my mind makes these bars a real treat!
