A tasty way to fry up a variety of fish, Lemon Fish Batter entails dipping fish in lemon juice, dredging in flour and dipping into batter and frying.

Ingredients

  • 1 pound crappies or perch filets
  • 1 cup unsifted flour , (with extra to dredge the fish before battering)
  • 2/3 cup water
  • 1/3 cup real lemon juice from concentrate, (with extra to dip fish into before flouring and battering)
  • 1 egg beaten
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar

Method

  • 1)

    In medium bowl, mix all ingredients to make the batter.

  • 2)

    Dip fish in real lemon juice.

  • 3)

    Coat with flour and then dip in batter.

  • 4)

    Fry fish in hot oil until golden brown; drain and serve immediately.
