A tasty way to fry up a variety of fish, Lemon Fish Batter entails dipping fish in lemon juice, dredging in flour and dipping into batter and frying.
Ingredients
- 1 pound crappies or perch filets
- 1 cup unsifted flour , (with extra to dredge the fish before battering)
- 2/3 cup water
- 1/3 cup real lemon juice from concentrate, (with extra to dip fish into before flouring and battering)
- 1 egg beaten
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon sugar
Method
- 1)
In medium bowl, mix all ingredients to make the batter.
- 2)
Dip fish in real lemon juice.
- 3)
Coat with flour and then dip in batter.

Fry fish in hot oil until golden brown; drain and serve immediately.
