Melt-in-your-mouth Chocolate Shortbread Cookies that you can slice and bake or roll out and use cookie cutters to make fun shapes.

I can’t think of a better way to show your love for someone than to bake them a special treat.

No one knows this better than my mom Carol, who I think enjoys sharing her baking at Valentine’s Day almost as much as she does during the holidays. Her festive cookies are not only totally scrumptious but they are completely adorable!

I am particularly smitten by these Chocolate Shortbreads she makes, often in the month of February. While the original recipe calls for cutting the dough into little strips before baking, my mom has been known to roll out the dough and make sweet heart-shaped, cut-outs that she tops with dusting of colored sugar.

They are almost too cute to eat. Almost.

Ingredients

  • 1 cup butter
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 cup powdered sugar
  • 1/2 cup cocoa

Method

  • 1)

    Preheat oven to 300 degrees.

  • 2)

    Cream butter and vanilla.

  • 3)

Combine flour, powdered sugar and cocoa; add to creamed mixture.

  • 4)

    Mix until dough holds together.

  • 5)

If cutting into strips, pat the dough into 9-inch by 4-inch rectangles and cut into 2-inch by 1 1/2 inch strips (my mom uses a pizza cutter).

  • 6)

If making cut-outs, gently roll out the dough on slightly floured surface and use cookie cutters.

  • 7)

Place cookies on an ungreased cookie sheet and prick with a fork before baking for 20-25 minutes.
