Twin Cities Pioneer Press: Mother’s Day in a Pandemic: Follow this foodie’s example and make a family recipe to honor your mom
When Sarah Peterson couldn’t be with her mom last Mother’s Day, she found a way to feel like she was with her mom.
She headed to the kitchen.
There, she pulled out butter, sugar, chocolate chips and other ingredients to make her mother’s signature treat: bite-sized chocolate chip shortbread cookies.
The smell of those treats baking evoked happy memories and helped ease the pain of the 137-mile distance between this daughter in St. Paul and her mother in Cloquet, Minn.
“They are super simple, but they are our family’s favorite cookies,” Peterson says. “We’ve had them at graduation parties, showers, holidays and my mom will make them ‘just because’ when she knows I’m coming home.”
Those cookies — officially known as Chocolate Chip Shortbread Bliss — were also the first bite of a delicious journey that continues today.

A gussied-up version of a traditional chocolate chip cookie, these cookies include rich, tender shortbread combined with semi-sweet chocolate chips and topped with a dusting of powdered sugar.
Ingredients
- 2 cups Butter
- 2 cups Powdered Sugar
- 2 teaspoons Vanilla Extract
- 1/2 teaspoon Salt
- 4 1/2 cups Flour
- 12 oz Semi Sweet Chocolate Chips
Method

Preheat oven to 350 degrees F.
- 2)
Cream butter and powdered sugar.
- 3)
Beat in vanilla and salt.
- 4)
Stir in flour and chocolate chips.
- 5)
Shape the dough into balls and flatten slightly with a fork.
- 6)
Bake for 15 minutes on an ungreased cookie sheet.
- 7)
Remove to rack. While cookies are warm, sprinkle lightly with sifted powdered sugar.
