Snowed In: What are we eating?

Just me, raising a glass to yet another record-breaking snowfall in Minnesota with a glass of frothy, orange juice—made from frozen concentrate in the blender—just like my grandma used to make.

Snowed In. Let’s Eat!

I am supposed to be leaving today for a vacation to Palm Springs with my girlfriends, but cue a three-day snowstorm, flight cancellations and here we are. Stuck at home in snowy Minnesota. End scene.

It’s fine, I’m fine!! I actually said (only half-joking) to one of my travel partners that I would be bummed if we weren’t in Minnesota to experience the epic snow. I love the anticipation of a big storm and taking all the necessary preparations to “hunker down,” especially planning out a special menu of snacks and cozy, comfort foods and rushing to the store for those last-minute essentials like potato chips, Top the Tater dip, frozen pizza, ice cream and liquor! Of course, I also like to prepare by stocking all the ingredients for at least a few meals.

Below are some of my top recommendations to ride out the storm, whether you fancy something hearty like a good hotdish or chicken pot pie or if you want an easy, peasy option like Sloppy Joes. I also love to use this “down time” at home to do some baking and plan to make one of our family’s favorite cookies, the Molasses Crinkle. Perfect to go with hot chocolate (or coffee) after playing in the snow, or to share with a neighbor who helps to dig you out.
