These vanilla cupcakes with a surprise filling are great for special occasions or “just because,” amping up a box cake mix by adding cream cheese and chocolate chips to the center of each cupcake and topping them with a rich, chocolate frosting.

This will be short and sweet because this recipe for Self-Filled Cupcake is just that.

My family loves these cupcakes that have a surprise filling of cream cheese and chocolate chips hidden inside. My mom has been baking them for years, for all sorts of special occasions and sometimes just because. If she had a signature cupcake (and shouldn’t we all?!), these would be it!

One of the best parts?  This recipe uses a cake mix so the cupcakes are super easy and quick to whip up. The simple addition of this scrumptious filling gives plain cupcakes a little, added layer of decadence, that frankly don’t we all need more of right now?

Ingredients

Cupcakes

  • 1 package cake mix, (yellow or white)
  • 8oz package of cream cheese
  • 1/3 cup sugar
  • 1 egg
  • dash of salt
  • 6oz milk chocolate chips

Frosting

  • 1 cup sugar
  • 1/3 cup milk
  • 5 tablespoons butter
  • 1 cup milk chocolate chips

Method

Cupcakes

  • 1)

    Prepare a muffin tin (two if you have them) with cupcake liners.

  • 2)

    Make cake mix according to directions; preheat oven according to package directions.

  • 3)

    Fill about 2/3 full with cake mix.

  • 4)

    In a small bowl, cream the cream cheese and sugar, beat in egg and salt. Stir in chocolate chips.

  • 5)

    Drop about one tablespoon of the cream cheese mixture into each cup.

  • 6)

    Bake as package directs.

Frosting

  • 1)

    Bring sugar, milk and butter to boil; boil for one minute.

  • 2)

    Stir in chocolate chips until smooth. Remove from heat. At this point, I like to use my hand mixer to beat the frosting until it is silky smooth.

  • 3)

    Spread frosting (while warm) on cupcakes.
