Our family’s go-to pasta salad, Ring Mac Salad is made with small ring pasta, hard-boiled eggs, minced onion and a dressing of mayo and mustard. Use a few extra eggs to make a decorative daisy on top!
Everyone appreciates a good pasta salad, and this one makes regular appearances on the Peterson side of my family. It comes from my husband’s grandma, Myrtle aka “Gam,” who made this tasty dish for so many family gatherings and church potlucks over the years.
Gam’s recipe for Ring Mac Salad includes little pasta rings, crumbled hard-boiled eggs and minced onion with a dressing of mayo and a squeeze of mustard. It makes for a great “salad” or side dish to bring to those get-togethers when you have to “bring something to share” as you can make it ahead.
When I recently learned that Gam used to decorate her dish by smoothing out the top and using an extra egg to create a sweet daisy, I thought, “well of course she did.” You see, Gam was such a special soul who radiated joy and happiness. And her awesome dishes with her added touches, like this one, reflect that joy!
Gam was the type of person who would delight in the details, from her inquisitive manner in every conversation to the way she adorned her signature dishes with a little something extra to make them stand out. She was oh-so-proud of her delicious home cooking and with good reason. I absolutely loved everything I ever had the privilege of eating at her table, and we still use so many of her recipes today.
Side note: Gam was also so creative out of the kitchen. A talented artist who starting painting late in life, she left behind so many beautiful paintings that we cherish today.
It’s no wonder she would take something like Ring Mac Salad and make it a fun work of art!
