Let’s Hear it for the Moms!

Mother’s Day is this weekend, making it the perfect time to honor all the moms who play such an important role in carrying on the food traditions in our families and keeping all of us so well-fed.  

Think about it. Our moms are often the ones who take charge of holidays and family gatherings to make the foods that are part of our beloved traditions. They nourish us with healing foods when we are sick, bake our favorite treats when we go home to visit and make us feel special with the foods we love on our birthdays. They cook from the heart, showing their love through dishes that have often been passed down from their own moms or grandmothers.

In my family, there are several cherished dishes that my mom makes for us! So many in fact, that’s what inspired me to start this blog. In recognition of Mother’s Day, I want to share a few of my all-time favorite dishes from my own mom that we actually have had the chance to make together.

Chocolate Chip Shortbread Bliss Cookies. I love when I walk in the door at my parents’ house and my mom lets me know she has made my “special cookies.” These are the most-requested cookies from my mom Carol’s recipe box and the only cookies I simply cannot resist! Plus they are very easy to make. I make them often for my own family and friends. They even earned me a third place ribbon at the Minnesota State Fair in 2022. You can get the recipe here.
The One and Only Chocolate Cake. This is the cake that my mom makes for family birthdays and special occasions. She actually found the cake recipe in a magazine years ago, paired with vanilla icing. Her own version includes a “perfect chocolate buttercream” frosting that I am here to say is perfection. You can get the recipe here.
Carol’s Italian Shells. Everyone has a favorite meal that reminds them of home. It’s a dish that no one can make as good as your mom or dad, something that you look forward to when you go back home or one you request whenever you get the chance. For me, this is that dish! Jumbo pasta shells filled with a mixture of Italian sausage, spaghettis sauce, a blend of cheeses and seasonings, it’s what I call a crowd-pleasing, cozy, comfort food. You can get the recipe here.
